INGREDIENTS:



Pot Roast

3-5 lb chuck roast
salt and pepper
1 tablespoon vegetable oil
1 cup coffee
1 cup beef broth
¼ cup balsamic vinegar
several sprigs of thyme

Caramelized onions

3 onions, sliced into thin rings
3 tablespoons butter
¼ cup balsamic vinegar

Gravy

2 tablespoons butter
2 tablespoons all purpose flour
1½ cup liquid mixture from pot roast
caramelized onions

INSTRUCTIONS:



 

Pot Roast
  1. Preheat oven to 325 degrees.
  2. Heat oil in deep saucepan.
  3. Season roast with salt and pepper.
  4. Brown roast on all sides.
  5. Transfer roast to covered clay pot or Dutch Oven.*
  6. Mix a cup of coffee, a cup of beef broth and ¼ cup of balsamic vinegar together, and pour over meat.
  7. Cover meat and bake until fork tender, about 3-5 hours.
  8. Transfer meat to a cutting board, cover with foil, and let your meat rest for about 10 minutes.

Caramelizing onions
  1. Melt butter over medium heat.
  2. Add onions, stir to coat.
  3. Reduce, cook on low, stirring every so often for about 50 minutes.
  4. Add ¼ cup of balsamic vinegar.
  5. Stir for a few more minutes, remove from heat, cool. Remove onions from pan and set aside until ready to make gravy.

 

how to caramelize onions

 

Gravy
  1. Melt 2 tablespoons butter in pan.
  2. Slowly add the two tablespoons of flour, whisking to create a roux. Make sure there are no lumps.
  3. Slowly add coffee-broth mixture, whisking as you add.
  4. You may want to add slightly more or less liquid, depending on how thick or thin you like your gravy.
  5. Add caramelized onions back in, stir to combine. Keep gravy warm until you are ready to use it.
