These little Irish Potato Bites are a simple and delicious appetizer for St. Patrick’s Day!
Just a few more days until we’re celebrating St. Patrick’s Day! Have you picked out your green to wear? I’m going to admit I don’t go all out for the holiday but I sure do love some of the food that you get to make to celebrate it. This year I’m making my Mint Oreo Layered Dessert, with whipped cream, mint Oreos, cream cheese, and pudding. Yum!!
But before we get to dessert my sweetie and I go traditional with corned beef for dinner. Now, I say traditional but you know I always like to do something a little different, right? Life would be boring without giving our favorites a little twist sometimes!
20 Red Potatoes, small (golf ball size)
½ c Corned Beef
¼ c Cheddar Cheese, shredded
1 Tbsp Butter, melted
Sour cream (optional)
- Step 1
Fill a large pot with water and bring it to a boil.
- Step 2
Add potatoes and boil until they are fork tender.
- Step 3
Preheat oven to 400°F
- Step 4
Once potatoes are cooked and have cooled cut each one in half and cut a small slice off of the rounded end so the potato can sit up.
- Step 5
Scoop out the inside of each potato half saving the potato insides in a bowl.

Add cheese, corned beef, butter to the bowl with the saved potato insides.

Salt mixture to taste. Also sprinkle some salt over the potato halves.

Scoop mixture into potato halves and then place them on a baking sheet.

Place baking sheet in oven for 10 minutes.
- Step 10
Remove from oven and serve with a dollop of sour cream.
When they come out of the oven you basically have one of the best potato skins you’ve ever had, filled with the flavors of St. Patrick’s Day! Add a dollop of sour cream on top and pop them in your mouth. They will be gone before you know it!
